The flavours and aromas of cheese change from the rind to the centre. To properly cut and savour mozzarella in all its nuances, a thin, fine steel blade is essential, allowing it to slice through without tearing the cheese. The polymethyl methacrylate handles provides a comfortable grip and the characteristic zoomorphic shape means that the blade does not touch the surface on which it is resting.
